Pan-Browned Brussels Sprouts

Brussels SproutsBrussels sprouts are naturally low in fat and calories. Brussels sprouts are rather high in protein, accounting for more than a quarter of their calories.

Ingredients

  • 1/2 pound brussel sprouts, trimmed and halved lengthwise
  • 2 large garlic cloves, sliced thinly
  • 2 Tablespoons olive oil

Directions

In a heavy skillet over moderate heat, heat oil and cook garlic, stirring until pale golden.

Reduce heat to low and arrange sprouts in skillet in a single layer, cut side down.

Continue cooking without turning until sprouts are tender crisp and undersides are golden brown, about 15 minutes.

Sprinkle with freshly ground black pepper. 

Makes 4 (½ cup) servings
