Pineapple Ham Glaze

Pineapple Ham GlazeIngredients

  • 1 cup packed brown sugar (or Splenda brown sugar blend)
  • 1 Tablespoon cornstarch
  • ¼ teaspoon salt
  • 1 can (81/4 ounces) crushed pineapple in syrup, undrained
  • 2 Tablespoon lemon juice
  • 1 Tablespoon mustard

Directions

Mix brown sugar, cornstarch and salt in 1-quart saucepan.  Stir in pineapple, lemon juice and mustard.  Cook over medium heat, stirring constantly, until mixture thickens and boils.  Boil and stir 1 minute.

Remove ham 20 minutes before it is done.  Pour drippings from pan.  Remove any skim from ham.  Cut fat surface of ham lightly into diamond shapes.  Pat or brush on ham glaze.  Bake ham about 20 minutes longer or until thermometer reads 135 degrees.

Cover ham with tent of aluminum foil and let stand 15 to 20 minutes or until thermometer reads 140 degrees. (Temperature will continue to rise about 5 degrees and ham will be easier to carve as juices set up.)
