Sweet Potato Chips

Sweet potato chipsIngredients

  • 2 sweet potatoes
  • 1 Tablespoon olive oil
  • 1 teaspoon salt

Directions

  • Slice 2 sweet potatoes into thin “coins.” 
  • Toss with 1 Tablespoon olive oil.
  • Sprinkle with a little salt. 
  • Roast at 400 degrees in a single layer for 20-30 min or until crisp and slightly brown.

Makes 4 (1/2 cup) servings

Nutrition Information per serving: 82 calories, 3.5 fat grams, 12 grams of carbohydrates, 601 mg sodium, 2 grams of fiber
