Alluring Artichokes

Don’t let their prickly exterior discourage you – artichokes are soft and succulent inside. Rich in dietary fiber, vitamins C and K, folic acid, potassium, iron, and copper, artichokes are also loaded with antioxidants that protect the body’s cells from damage.

To prepare, trim off the top quarter inch, the thick stem at the base, and the sharp tips of the outer leaves. Steam upside down in a covered pot about 30 minutes or until the leaves pull easily away, then use your teeth to scrape the tasty part from the inside of each leaf. Cut away the fuzzy, bitter “choke” to enjoy the tender artichoke heart in the center.

Slice the whole fruit into sections, then hold each piece under water as you gently separate the seeds from the inedible white pith. An effortless way to enjoy the benefits is by purchasing bottled pomegranate juice, which has more antioxidant power than cranberry juice or green tea.

Stupendous Salmon

Loaded with omega-3 fatty acids that boost heart health, salmon is also an excellent source of protein, niacin, vitamins B6 and B12, and selenium. Salmon’s rich flavor is delicious in plain, savory, and spicy dishes. Plentiful in natural oils, salmon is best baked or grilled with no added fat.
