Quinoa Salad Plate

Ingredients

  • 8 oz of Quinoa
  • 3 cups of Water
  • 2 Medium Tomatoes
  • 4 oz Chopped Red Peppers
  • 2 tsp Chopped Cilantro Leaves
  • 2 tsp Chopped Fresh Mint Leaves
  • ½ tsp Fresh Garlic, Minced
  • 2 Tbsp Canola Oil
  • 2 Tbsp Sherry Wine Vinegar
  • 1 Tbsp Lime Juice
  • 1/8 Tbsp Ground Pepper
  • 1 cup Green Leaf Lettuce or Spring Mix
  • 1-2 Strawberries for Garnish

Directions

1. Add quinoa to boiling water. Return to a boil. Reduce heat to medium and simmer for about 10 minutes or until grains appear translucent, then drain.

2. Combine quinoa, chopped tomatoes, red pepper, hominy, cilantro, mint, garlic, canola oil, vinegar, lime juice, and black pepper.

3. Place a bed of green leaf lettuce or spring mix on a plate.

4. Arrange 3 tomato slices over lettuce. Mound 1 cup of quinoa salad over tomatoes.

5. Garnish with a strawberry.
