Tortilla Chipotle Lime Chicken

Tortilla Chipotle Lime ChickenIngredients

  • 2 1/4 tsp Margarine
  • 1 T + 1 1/2 tsp All-purpose Flour
  • 1 T + 1/4 tsp Roux
  • 1/2 C + 3 T Fat Free Milk
  • 2 T Fresh Cilantro Leaves
  • 2 tsp Chipotle Chili Powder
  • 1/2 C Canola Olive Oil Blend
  • 1/4 C Lime Juice
  • 6 ea Chicken Breast, Boneless, Skinless, Raw, 4 oz
  • 2 oz Spinach Tortilla, diced 1/4"
  • 2 oz Tomato Tortilla, diced 1/4"
  • 6 oz Plain Bread Crumbs, Dry

Directions

  1. Prepare Roux: In an oven proof stockpot or saute pan, melt margarine on a cooktop over medium heat.
  2. One melted, stir in flour until fully combined.
  3. Cover and place in a 300 degree F oven. Cook for 30 minutes, stir thoroughly, and cook covered for an additional 30 minutes. Remove from oven.
  4. White Sauce: in a stockpot, heat milk to just below a simmer.
  5. Whisk in roux gradually until fully combined. Increase heat until sauce begins to boil. Reduce heat and simmer for 30 minutes. To sauce, add 1 tablespoon of the cilantro and 1/2 teaspoon of the chili powder. Mix until well blended. Hold hot.
  6. Combine oil, lime juice, remaining 1 tablespoon of the cilantro and remaining 1 1/2 teaspoon of the chili powder, until well blended.
  7. Add chicken to marinade. Toss to coat evenly. Hold refrigerated for 4 hours to marinate. Drain and discard excess marinade.
  8. Combine tortilla and bread crumbs.
  9. Dip marinated chicken into breading mixture, fully coating all sides evenly. Pat down breading, if needed to ensure proper coating.
  10. Place on sheet pans. Bake in a preheated 400 degree F standard oven for 18 minutes or until lightly golden. Hold hot.
  11. Ladle 1 oz sauce on plate. Top with 1 chicken breast.

Portion: Serve 1 chicken breast and 1 oz ladle sauce, Yield: 6 servings
