Rhubarb Salsa

rhubarbLightly oil one stalk of rhubarb with oil. Grill over high heat about 5 minutes until soft and charred.

Chop rhubarb, mix with 1 ½ cup strawberries diced, 2 to 3 tablespoons raspberry preserves and snipped fresh basil. Serve with cinnamon pita chips, ice cream or angel food cake.
