Roasted Pear Dressing

Roasted Pear DressingJo Cessna used this dressing on Wild Rice Apple Salad in her class, Fall Dishes with Grains and Beans.


  • 2 pears, sliced length-wise and roasted (good pears for roasting are Red or Bosc they are not as grainy)
  • 3 Tablespoons red onion, chopped
  • 6 Tablespoons red wine vinegar
  • ¼ teaspoon sea salt (more as needed)
  • 1 teaspoon maple syrup (more if pears are not ripe or sweet)
  • Juice and zest of one orange
  • Black pepper to taste


To roast pears, heat oven to 400°. Slice pears and lightly toss with oil and a pinch of sea salt.

Spread out on a parchment lined baking sheet and roast until soft and caramelized.

In food processor, puree other ingredients, add freshly grated nutmeg to taste, adjust salt.

If you want a creamy dressing for a salad stir in 1 tablespoon or more of mayonnaise.
