Sloppy Lentils

LentilsJo Cessna, KishHealth System Healthy Culinary Instructor says this recipe is budget and time savvy. Lentils are full of fiber and cholesterol-busting properties.


  • 2 cups water
  • 1 cup of green or brown lentils
  • 1 cup onion, chopped
  • 15 oz. can diced tomatoes (drained), tomato sauce or 2 cups fresh tomatoes, chopped
  • 1 (6 oz.) can tomato paste, optional (as needed to thicken – especially if using tomato sauce)
  • 2 cloves garlic, minced
  • ½ cup ketchup (read the label selecting those without high fructose corn syrup)
  • 1 teaspoon mustard powder
  • 1 Tablespoon chili powder
  • 3 Tablespoons sucanat, molasses,  maple syrup or honey
  • 1 Tablespoon cider vinegar
  • salt and ground black pepper to taste
  • 4 hamburger buns, spilt or substitute with a bed of thinly shredded greens


Combine all ingredients in the crockpot (besides the buns or greens!). Turn on low and cook for approximately five hours, until lentils are tender and the mixture has thickened and absorbed most of the liquids.

Serve on open-faced hamburger buns, or a large bed of greens.
